Nope, No Dessert Tonight

No fancy dinner tonight. Just hamburgers. However, I must brag on a recipe that I tried out, thanks to The Pioneer Woman Cooks. I love onion straws and they seemed like the perfect complement to some juicy hamburgers. A disclosure: my household was filled with smoke thanks to overheating the oil. So, learn from my mistake and get a thermometer to gauge the oil temperature.

The straws were yummy -- my toddler agrees. So, here's the easy recipe...without smoke.

Onion Straws
1 large onion
2 cups buttermilk
2 cups flour
1 tablespoon salt
Lots of black pepper
1/4 to 1/2 teaspoon Cayenne Pepper (no hot spices for me)
Canola Oil

Slice onion very thin. Place in a baking dish and cover with buttermilk for at least one hour. Combine dry ingredients and set aside. Heat oil to 375 degrees -- very important step. Grab a handful of onions, throw into the flour mixture. Shake off excess and drop in hot oil. Fry for a few minutes and remove as soon as golden brown.
